1/2 # of Chorizo Sausage
3/4 C. Spanish Red Wine (Like Rioja)
2T. Brandy
Fresh Parsley, Chopped (for garnish)
Crusty Bread
Prepare this dish the day before you are serving it.
1. Pierce the sausages with a fork a few times each. In a large pan, pour the wine over the sausage and bring it to a boil.
2. Reduce the heat and simmer covered for 15-20 minutes. Remove from heat and marinate in the fridge overnight.
3. Remove the chorizo, reserving the wine. Cut the sausage into 1/4 inch slices (on an angle). Add them to skillet and add the brandy. Set the chorizo on fire-be sure to stand back! When the flames die down, pour the wine over the pan and cook until it is almost evaporated.
4. Serve hot, garnished with parsley and crusty bread.

The first time we ever went to a tapas restaurant I had no idea what it was all about. I was starving and ordered one dish.... the country bumpkin in me thought it was just a very affordable restaurant! Until I got my 'meal' :-) (duh!)
This recipe sounds delicious! I'm meeting a bunch of friends on the beach in September - maybe I'll make it for them! =)
